About spelt
Spelt (Triticum spelta) is an ancient type of wheat that has been grown for thousands of years. Its grain is tightly wrapped in a husk, and its flour makes bread with a full, slightly nutty flavour.
Spelt is not just for our bread: the focaccia, pizzette, focaccia sandwiches, strudels and chocolate babka are all made with spelt flour too.
Good to know: spelt is a type of wheat and contains gluten. If you avoid gluten, look for the dishes labelled “gluten-free” on the menu.
Sourdough in short
No secrets and no shortcuts – this is how sourdough bread generally comes together:
Natural leaven is a living mix of flour and water, full of wild yeasts and lactic acid bacteria. It is fed with fresh flour.
Flour, water, salt and some of the leaven. No baker’s yeast and no additives.
The dough rises slowly. Slow fermentation gives the bread its flavour, open crumb and firm crust.
Finally a hot oven: the crust crackles and the inside stays soft and moist.
